This dessert tastes great and is healthy for the whole family. One warning, children under two could choke on the raisins. You can leave them out of the recipe.
- 6 small cooking apples (Rome is a good variety)
- 1 cup water
- 1 cup apple juice
- 2 teaspoons vanilla
- ½ t cinnamon
- 6 tablespoons raisins (Leave out the raisins if your child is under two years of age. They may cause choking.)
Wash and core apples. Remove peel from the top 1/3 of each apple. Arrange in a baking dish. In a sauce pan, bring water, apple juice, cinnamon and vanilla to a boil. Pour over apples. Add 1 tablespoon of raisins to each hole in the middle of the apples. Bake at 350 F for 1 hour. Baste frequently.
Let your children arrange the apples in the baking dish and put the raisins in the middle of each apple.
Carrots and Turnips
This dish has two of the mouse's favorite vegetables in the book Lunch by Denise Fleming. The taste of the carrots and turnips cooked together is really great.
- 1 cup diced carrots
- 1 cup diced turnips
- 1 tablespoon margarine
- salt to taste
To dice the carrots and turnips, cut them up into pieces ½ inch square or smaller. Boil them in water with salt added until they are tender, but not too soft. Add the margarine at the end.
Let your children help wash the carrots and turnips or add the margarine.
