| What we do |
| The mission of the Laboratory Evaluation Officer is to secure the health and safety of citizens of the state of Texas who consume milk, milk products, and shellfish. This is accomplished by auditing quality control and testing procedures to assure compliance with the standards of the appropriate program in: |
- Milk industry laboratories
- Public health milk laboratories
- Shellfish laboratories

| Responsibilities |
| The Laboratory Evaluation Officer's responsibilities: |
- Maintain Food and Drug Administration (FDA) certification to audit milk, dairy, and shellfish laboratories
- Perform certification audits of milk and dairy laboratories according to the requirements of the National conference on Interstate Milk Shipments and the FDA 2400 Series Forms
- Train milk analysts in Texas
- Perform certification audits of shellfish laboratories according to the requirements of the Interstate Shellfish Sanitation Conference (ISSC).
